Had to share this with you...an experiment that worked!
Me: I want some muffins.
Me: Do I want to look up a recipe? No.
Me: Lazy
Me: Look in the pantry, what do I have?
Me: Not much.
Me: Out of applesauce, darn. But I do have pumpkin, yay!
Me: Do I want to look up a recipe now? Nope.
Me: Still lazy.
Me: So you're going to make one up?
Me: Yep.
Pumpkin Puffs (cause they look all puffy in the oven)
Mix first:
1 C. pumpkin (organic)
2 eggs
1/3 C. oil
1/2 C. sugar (natural)
1 tsp. vanilla
Then add:
2 C. unbleached flour (or a combo of whole wheat)
1/4 C. sprouted flax seed meal (super high in omega 3's)
you could substitute wheat germ for this.
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg (I grate mine fresh, try it, it's so easy.)
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
Cinnamon sugar
Mix all together only until incorporated, don't over mix. Spoon into buttered muffin tins, almost filling to the top, sprinkle each muffin with cinnamon sugar. Bake at 375 for 25 min. Put the kettle on and have a cup of tea waiting for when they get out of the oven :)




You *make up* muffins and they turn out like that??? You are SO cool!

They look so delicious, I love the way the tops are all swirly.
Just a question, which might sound dumb to you. When you say 1 cup of pumpkin, are you talking canned pumpkin. We don't have canned pumpkin in Australia. What texture is it and could you just cook your own pumpkin up and mash it?

sounds delicious!! now i have a new recipe to try!! that's so great that you can just create a recipe like that. i usually start with a recipe and it evolves (except baking recipes), but I've never been able to just start from scratch. you're awesome!

I use milled flax seed all the time, but wasn't aware it could be "sprouted". Do you sprout the flaxseed yourself first and then grind it up? If so, is sprouting flaxseed like sprouting any seed? We are muffin fiends at our house and will definitely give this one a go!

Yep, canned pumpkin. I have never tried cooking and mashing my own pumpkin, but I guess it could work as long as you press all the liquid out. The texture of the canned pumpkin here is very smooth and thick--not watery at all. You could also give this recipe a go with applesauce instead--I think I'll try that next too.

I wish I could say that I sprouted my own flax! What I have is a large container of organic sprouted golden flax. It's already ground into a meal. I add it to many of my bread recipes and to pancakes. Noah loves it on yogurt and it goes well in fruit shakes too. I did read though that sprouting flax seed in a traditional sprouter can turn in to a gooey mess because they store water--so there must be a special way of doing it.

I have an almost similar (excepted for the pumkin) easy recipe called "french breakfast puffs" that I'm going to have on my blog some time in early March... and I grate nugtmeg too ! ;P

Now you are talk'in my language. As I hope you know I find everything you do charming. As I have confessed before, I do not sew, knit, crochet, or quilt. My husband does any needle necessary repairs. But I DO cook and pumpkin is my most favorite flavor. So here I go cause they look soooo good. I also really admire a woman who wants, cooks and EATS a muffin! Way to go.

ok, I am way impressed. If I made up a recipe for something baked it would surely result in disaster. They look really, really good.

Oooh, thank you! I've got about 10 cups of frozen pumpkin in my freezer that I roasted back in the fall, and I'm in need of new pumpkin recipes to purge it all before spring!
